Parkin

Ingredients:

2.5ml(1/2 level tsp) bicarbonate of soda
300ml(1/2 pint) milk
225g(8 oz) treacle
225g(8 oz) golden syrup
100g(4 oz) butter
450g(1 lb) flour
350g(12 oz) medium oatmeal
5ml(1 level tsp) salt
50g(2 oz) sugar
5ml(1 level tsp) ground ginger
1eggbeaten

Method:

Preheat the oven to 180c (350F).
Butter a 23 cm (9 inch) square cake tin.
Dissolve the soda in the milk. Melt the treacle, syrup and butter together.
Mix all the dry ingredients together, pour in the melted butter mixture, stir well, add the egg and milk; stir well. Turn into the prepared tin.
Bake in the oven at 180c (350F) mark 4 for 45 minutes. Turn out of the tin when cold. Store in an airtight container for at least one week before eating.
